What is tiramisu?
Before knowing its origin and how to make our tiramisu, we must know what Italian tiramisu is. Tiramisu is a layered dessert typical of Italy, which consists of three essential ingredients: coffee, mascarpone and egg yolks.
The traditional presentation of Italian tiramisu is usually in small glass dishes so that the different layers of the dessert can be appreciated.
Although it is a dessert with few ingredients, it hides a great complexity of flavors, which makes it very important to choose the best ingredients. Coffee is considered by many pastry chefs as the most important ingredient in this recipe, since it is in charge of balancing the mascarpone cream and adding aroma to this Italian dessert.
History of Italian tiramisu: discover the origin of the Italian dessert
Italian tiramisu originated in the city of Treviso, in the Veneto region of northeastern Italy. A curious fact about the town is that its most popular breakfast is eggs with coffee, so it was not surprising that they invented this Italian dessert.
Its origin has been debated over the years, but it is now widely accepted in the culinary world that the creation of tiramisu can be traced back to Le Beccherie, an Italian restaurant in the area.
On Christmas Eve night in 1969, the pastry chef Roberto Lolì Linguanotto came up with the definitive version of his tiramisu after years of testing recipes. To this day, Le Beccherie still prepares this Italian dessert according to its original recipe.
How to choose the right coffee for tiramisu making
As mentioned before, many cooks consider that the most important ingredient in tiramisu is coffee. Therefore, choosing the coffee in the most appropriate way is essential to obtain a high quality tiramisu.
Coffee is very present in Italian culture, and they tend to prefer very strong and bitter flavors. This is why choosing a strong coffee with bitter flavors is essential to elaborate a good tiramisu.
From Doppietta we recommend that you use a blend of coffee beans from India, Brazil and Ethiopia, as they are characterized by their prominent bitter notes.
